A perfect coffee for those dark and gloomy mornings, with a comforting warmth that makes it easy to enjoy as part of your everyday routine. We’ve been getting notes of chocolate mousse, plum and pear, making it a great choice for both filter and espresso.

We recommend grinding a little finer to push the extraction and bring out more sweetness and depth. As a filter, expect a smooth, chocolatey cup with gentle notes of plum and pear. As an espresso, look for a rounded, sweet shot with plenty of chocolate and dried fruit.

For consistent results, we recommend brewing with measured inputs rather than estimating by eye. Always use a digital scale to weigh both your coffee dose and water. As a baseline, use a brew ratio of 60–70g of coffee per litre (1000g) of water. This range can be adjusted depending on the brewing method, water composition, and the specific coffee you’re working with. Control your variables, make small adjustments, and use taste to guide your final recipe.

Espresso

Consistency in espresso comes from working within the parameters of your equipment. Use the dose recommended for your basket (usually marked on the side or provided by the manufacturer) and keep it consistent. As a starting point, aim for a brew ratio of around 1:2 — for example, 18g of coffee yielding 33–35g of espresso in the cup. Target an extraction time of 22–30 seconds, with a brew water temperature between 93–95°C. From there, adjust grind size to control flow and use taste to fine-tune the result.

Fazenda Limeria

The Cocatrel Cooperative was founded in 1961 in Três Pontas and has since grown to become the second-largest coffee cooperative in Brazil. It has over 6,000 members and 11 buying points across the region. Each coffee delivery is electronically recorded and assigned a unique QR code, providing full traceability and allowing growers to track exactly where their coffee is. More than half of the cooperative’s members grow coffee on farms smaller than 10 hectares.

Falcon Specialty, works with Cocatrel Direct Trade, a branch of the cooperative focused on sourcing and promoting exceptional coffees from its members.

Fazenda Limeria is a 91-hectare farm, with 28 hectares dedicated to coffee production. It is owned by Bruno Spuri Silvestrini, an agronomist who comes from a family of coffee producers. His journey began 19 years ago, and he has gradually expanded the farm by acquiring additional parcels of land. Today, the farm grows Arara, Red Catuai, Mundo Novo and Catucaí varieties.

The farm is committed to producing high-quality coffee while prioritising sustainable practices. Its approach focuses on balancing productivity with environmental responsibility and careful attention to every stage of production.

This lot is a Mundo Novo variety, processed using the natural method and sun-dried on patios for 12 days. The carefully managed drying process helps develop the coffee’s sweetness and distinctive flavour profile.
